This process will start with an innovative survey created by Mark to form a baseline as to how the client thinks about wine, how he or she currently buys wines, and what the goals are for the cellar. Clients who entertain large groups frequently have entirely different needs from those who enjoy appreciating how wines age and develop over years.
Then there will be a one-on-one tastings session where Mark will choose individual wines around which to taste and have conversation, identifying the exact likes and dislikes and most importantly why this is so.
Finally, the client will receive a detailed “palate profile,” which explains the characteristics in wine that the client finds agreeable, which regions and individual wines to explore and collect and time frames for this process, and any other needs or questions that might be requested.
